Melt in Your Mouth Paleo Almond Butter Cups

Is there anything better than melt in your mouth chocolate? I don’t think so! I LOVE chocolate! That smooth, velvety texture is like nothing else. I recently tightened up my diet due to some autoimmune diagnoses (that’s another post for another day), and I was so badly missing chocolate that melted so good and tasted even better!

And that’s where this recipe comes in! It’s so simple and easy to whip up. The hardest part is waiting for the chocolate to set up in the fridge. You are gonna want to dig right in! It’s paleo and yet you’d never know by how decadent it is. It’s also very versatile. You can use your favorite nut butter and add in your favorite nuts, dried fruit or whatever you’d like.

**I recommend using silicon molds for this recipe because it makes them so easy to remove. Something like this works great! You could also just use parchment cupcake liners if you don’t have them. I don’t recommend using regular liners because the chocolate tends to stick.

So without further ado, here is the recipe!

Paleo Almond Butter Cups:


1/2 cup coconut oil

1/4 cup almond butter

1/2 cup cacao powder

1/4 cup maple syrup

Pinch salt 

Directions:

In a medium sauce pan, melt coconut oil over low to med/low heat. Add in almond butter and gently stir until smooth and incorporated. Once that comes together, add in cacao powder, maple syrup, and salt. Whisk until fully incorporated and smooth. Set your molds on a cookie sheet for easy transport. Using a spoon, piping bag or small chocolate pipette pipe chocolate into each of the molds. Transfer to the refrigerator until set up (the waiting is the hardest part 😉 ). Once set, gently pop them out of the molds. Be quick because they melt fast which makes them so buttery and delicious to eat! Store them in an airtight container in the fridge. Enjoy them! I promise they won’t last long!
