Gluten Free Banana Bread

If you have over-ripe bananas lying around you are gonna want to make this recipe! My kids absolutely LOVE banana bread but when we switched to gluten free it took me a while to figure out a recipe that would pass the kid test. Some were too dry and some didn’t set in the middle. So when I landed on this gem I knew we had a winner! The kids loved it and I loved the ingredients. The old recipe I had was loaded with sugar so I knew I wanted less sugar and more nutrients….enter this yummy bread.

I have tried and tested many gluten free flours. I find it hard to find a gluten free flour that has no added junk or fillers. I love Costco’s brand gluten free. It bakes well and isn’t too dry but even better the ingredients are pure. I highly recommend this brand.

This bread is loaded with super goodness and lots of nutrients. Give it a try and let me know what you think!

Gluten Free Banana Bread:

1 3/4 cups gluten free flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon Himalayan pink salt or sea salt

1/2 teaspoon cinnamon

3/4 cup coconut palm sugar (this has a lower glycemic index then white sugar) 

2 Tablesppons chia seeds (optional)

2 Tablespoons hemp seed (optional)

1/4 cup flaxseed meal (optional)

1/2 cup coconut oil, melted

2 large eggs

1 teaspoon vanilla extract

3 medium over-ripe bananas, mashed

Directions:

Preheat oven to 350 degrees. Grease and lightly flour a loaf pan, set aside. Whisk together flour, powder, soda, salt, palm sugar, cinnamon and seeds. Mash bananas, add oil, eggs, and vanilla. Combine the dry and wet ingredients until well blended. Pour into loaf pan and bake for 45-60 minutes or until a knife comes out clean from the center. Allow to cool and enjoy!!!
